Miso & Maple French Toast: Perfection
There are many recipes I cook repeatedly, and most are completely delicious, but there are some that reeeally stand out. This French toast combo is for sure one of them! I won't say it's better than Nonna's bolognese, but I won't not say that either.. An epic combination of salty and sweet, and no bacon required, this brekky (or lunch, or dinner, or dessert..!) is my favourite filling comfort food when I have backyard eggs on hand. A perfect combo of protein, carbs, healthy fats as is, add your favourite greens for a well-rounded meal. Hot dang!
Miso & Maple French Toast - Serves One
Vegetarian, DF, GF option
2 slices sourdough bread (GF also works very well)
2 Tbsp any milk
Tbsp fresh miso paste (white is my fav for this)
2 Tbsp hemp seeds
Salt & pepper to taste
Optional: 1/2 avocado; handful wilted greens; grilled stonefruit; sauerkraut
Whisk egg, milk, salt & pepper in a bowl, set aside. Melt nuttelex on low-medium heat in frying pan big enough to fit your bread. Soak bread slices one at a time in egg mixture, pressing down to ensure well absorbed. Place in frying pan together and fry, partially covered, on both sides (approx. three mins per side). When bread is cooked through and golden brown (you can press down in the centre and nothing oozes out), remove from pan.
Spread miso on each piece, follow with maple syrup, hemp seeds and any other toppings you like.
Best served ASAP with a pot of coffee and the morning paper - delish!
